Blueberry Pie of LOVE!

So, it’s been a while…but I am back!
Most people who are in love with food like I am probably have an opinion on seasonal cooking. I would agree with those opinions, but blueberries aren’t in season year round.
And that means Blueberry Pie would not be in season year round!
And that is sacreligious as far as I am concerned.
This pie has made angels sing….not only is it ridiculously delicious, it is equally easy to make. I am a self proclaimed non-baker, but this changes things everytime I make it. Like self-affirmation! You should affirm yourself.
I made this pie for the Quinlans (our NYC family) last Thanksgiving. I think it is the only reason they like me! Just kidding…they are our dear friends. And they like to eat! We made one the night before and woke up the next morning and ate it for breakfast! They were so crazy about it, we went to the A & P grocery store before they closed on Thanksgiving Day. After we got the ingredients and were walking through the parking lot to the car, Beverly stopped dead in her tracks and asked, “who were we kidding?” We need more than one pie. So, we went back in and got ingredients for several pies. Nevermind all the pumpkin and sweet potato pies that were waiting to be eaten at home. We could have skipped all of Thanksgiving and been thankful for just the Blueberry pies…but we pushed through! Moral of the story is: make more than one if you know what is good for you.
BLUEBERRY PIE of LOVE
Ingredients
- 1 Holy Cow Pie Crust (or you use a frozen one that has thawed for 15 minutes at room temperature)
- ½ lemon
- 1 ½ pints of fresh blueberries (or 3 of the smaller packages)
- ½ cup sugar
- ½ cup flour
- 1 stick of butter (very cold)
- ¾ cup sugar
- ¾ cup flour
First thing’s first…Preheat your oven to 350 degrees.
In your prepared pie crust, pour the 1/2 cup flour and sugar. Mix together and spread in bottom of crust with a spoon.
Toss your blueberries with the juice from the 1/2 lemon in a small bowl. I use a mesh strainer, to make sure there are no seeds. Just an extra small tid bit of love to help you acheive perfection.
Next, pour the blueberries into the pie crust.
Spread the blueberries around to cover evenly.
Now, take your stick of butter. Don’t look at me like that…butter is the #1 commandment. Just do what I say. Cut it in cubes. Small tid bit – I put the stick of butter in the freezer for a couple of minutes so it is good and hard for cutting into cubes.
In a small bowl incorporate butter cubes with remaining 3/4 cup flour and sugar. I didn’t take a picture of this step before I poured the crumble over the blueberries (sorry…I was excited), but you can see what your crumble should look like…
Bake for 1 hour at 350 degrees till golden brown. Let pie cool for a little while if you can stand it. The goodness will take you over!!!

Holy cow!!!!!!

Since here on The Foodospel we talk about all things holy, it is VERY appropriate for me to yell…
HOLY Cow! I made a homemade pie crust!
And do my happy dance.
That’s right people…it is officially possible. I know, I couldn’t believe it either.
In my opinion the hardest part was rolling it out on my 14X20 inch counter top space (where my cutting borad just barely fits), but the goodness prevailed. I found the recipe at Tasty Kitchen…it’s called Sylvia’s Perfect Pie Crust.
And PERFECT it is…
Ingredients
- 1-½ cup Crisco (vegetable Shortening)
- 3 cups All-purpose Flour
- 1 whole Egg
- 5 Tablespoons Cold Water
- 1 Tablespoon White Vinegar
- 1 teaspoon Salt
In a large bowl, with a pastry cutter, gradually work the Crisco into the flour for about 3 or 4 minutes until it resembles a coarse meal.
In a small bowl, beat an egg with a fork and then pour it into the flour/shortening mixture. Add 5 tablespoons of cold water, 1 tablespoon of white vinegar and 1 teaspoon of salt. Stir together gently until all of the ingredients are incorporated.
Separate the dough into thirds. Form 3 evenly sized balls of dough and place each dough into a large Ziploc bag.
Using a rolling pin, slightly flatten each ball of dough (about ½ inch thick) to make rolling easier later.
Seal the bags and place them in the freezer until you need them. (If you will be using it immediately it’s still a good idea to put in the freezer for about 15 to 20 minutes to chill.)
When you are ready to use the dough to make a crust, remove from the freezer and allow to thaw for 15 minutes. On a floured surface roll the dough, starting at the center and working your way out. (Sprinkle some flour over top of the dough if it’s a bit too moist.) If the dough is sticking to the countertop use a metal spatula and carefully scrape it up and flip it over and continue rolling until it’s about ½ inch larger in diameter than your pie pan.
With a spatula, lift the dough carefully from the surface of the counter into the pie pan. Gently press the dough against the corner of the pan. Go around the pie pan pinching and tucking the dough to make a clean edge.
I have not mastered the perfect edge yet, but whose perfect?
This deserves it’s own post. I am promptly making it’s one true love…

Where it all began…

Right here. It didn’t start anywhere else because it couldn’t. Except for my heart of course and you didn’t know that! I mean, if you did know that, you would be like the Creator of the Universe or something…but you are too busy for that!
I didn’t know (and still don’t) what my first post here on The Foodospel would be, so I am just typing.
Let me introduce you to me and the blog:
Me, my, I
Welp, I don’t really know what to say ‘about’ myself. The problem is, I tend to want to make some exciting, hyperbole infused description of me and what I do, but the Truth is I am just everyday normal. I live here in NYC (by way of Mississippi and Houston, TX) with my husband Jason and two cats (in no particular order) Smasher and Mister. All boys. Just thought I’d mention that. Could be important later.
Anywho, we sold everything we owned (poor kitties thought they were next) to move here so Jason could attend NYU school of law. Funny thing about this that he has NEVER won a case against me, so you might be questioning the career of choice, but come to find out Jason is a talented writer and thinker. So, just like my dad famously infamously has quoted many times in my life, “you can’t win ‘em all sports fans”, I too, quote this for my husband. Thank God (and dad) for one-liners to explain the world!
I have a degree in Communication from Mississippi State University (Go Dawgs!) with an emphasis in Public Relations and I do not work in this field. I took the only job I could find to make sure I could pay some bills. I am currently an executive/personal assistant to the CEO of a publishing company. That being said, planning travel arrangements and buying toilet paper on occasion, do not fulfill my need to be doing something creative.

What is The Foodospel?
The word gospel means good news. And this Foodospel is all according to me! I am from the south and food is how we show people we love them. I am going to cook, eat someone else’s cooking, and talk about the relationships that revolve around food/cooking on a regular basis for me. Couples meet, date, and get married over food. Couples also get divorced over food (I don’t know how I am still married sometimes?!). Kids are conceived because of food and, well, wine and liquor (don’t worry I won’t tell anyone what you did last night!). Families come together for dinners, cookouts and holidays — all involving food. We eat food at the movies, at carnivals and state fairs. We take food on long road trips and eat food on planes. Let’s face it, everywhere there are people, there is food.
Nothing makes me happier.
